2 c. sliced onions
2 c. ketchup
2 c. water
1 tsp. salt
1/4 c. Worcestershire sauce
1/ 2 c. white vinegar
1/2 c. dark brown sugar
4 tsp. dry mustard
4 lbs. pork spareribs

Preheat oven to 350ºF
1. In a large bowl, combine onions, ketchup, water, salt Worcestershire sauce, vinegar, and mustard.

2. Split ribs down the center between the bones.

3. Heat a lightly oiled skillet over medium high heat. Add ribs and sear until browned. This may have to be done in several batches.

4. Place ribs in a single layer in two baking pans or casserole dishes. Pour half the sauce over the ribs. Reserve remainder

5. Bake ribs in preheated oven for 3 hours. Turn and baste meat every twenty minutes with remaining sauce, using all the sauce by two hours. Continue turning and basting ribs using the sauce in the pan during the last hour of baking.

Combining the first six ingredients creates a basic, homemade barbeque sauce. Amounts can be adjusted to taste or dietary restrictions. Because I have high blood pressure, I only used 1 tsp. salt. I found this was plenty. We also used liquid mustard, and light brown sugar because this was what we had on hand. Jim and I found that our oven roaster was big enough to fit all the ribs in a single layer. Rather than reserving half the sauce, Jim poured all the sauce over the ribs, and checked the ribs ever 1/2 hour, basting and adding liquid as needed.
