1 large onion sliced
2 2 1/2 lb chickens cut into quarters
1 can (20 oz) crushed pineapple with juice
1/4 cup orange marmalade
2 tbsp red wine vinegar
1 tsp powdered garlic
salt
pepper

Directions:
Directions:
Thinly slice one-half of onion and finely chop the other half. Layer the sliced onions in a roasting pan. Top with the chicken. Stir together the chopped onions, pineapple, marmalade and vinegar. Season with garlic, salt and pepper to taste. Pour over the chicken, cover and let marinade in refrigerator about 3 hours. Bake at 350º for about 2 hours or until tender. turn chicken every 30 minutes
