3/4 lb pork tenderloin
olive oil
salt
pepper
1/2 cup orange juice
2 tbsp brown sugar
1 tbsp Dijon mustard
1/2 cup fresh cranberries

Directions:
Directions:
Remove fat from tenderloin and cut into thick slices. Flatten into 1/2 inch pieces. Brown pork in light covering of olive oil for 3 minutes and remove to a plate. Add orange juice to pan and scrape up brown pieces. Add brown sugar, mustard and cranberries. Stir to dissolve sugar, simmer for 2-3 minutes. When cranberries burst, mash them with spoon and stir to make a smooth sauce. Add pork back to pan and simmer until cooked through
