1 lb large shrimp, peeled and divined
1 t cayenne pepper
1 t salt
2 eggs, beaten plus four T water
1 c flour
2 1/4 c sweetened coconut flaked
4 c canola oil

Directions:
Directions:
Season shrimp with cayenne and salt. Put eggs flour and coconut in three separate mixing bowls. Dredge shrimp in flour, and then dip in eggs and coconut, pressing firmly on shrimp. In a sauce pan, heat oil on medium heat until sizzling. Fry shrimp approximately three minutes on each side or until golden brown. Drain shrimp on paper towel.
