1-8 OZ PKG CREAM CHEESE
3 TBSP FLOUR
1 CUP MILK
10 SLICES JALAPENO, FINELY CHOPPED
4-10 OZ CANS WHITE SHOEPEG CORN, DRAINED

PREHEAT OVEN TO 350º. MELT THE OLEO AND CREAM CHEESE IN A SAUCEPAN OVER MEDIUM HEAT. STIR IN THE FLOUR, MILK AND JALAPENOS. COOK UNTIL THE MIXTURE REACHES A PUDDING LIKE CONSISTENCY. POUR THE CORN INTO BAKING DISH AND POUR THE CHEESE MIXTURE OVER THE CORN. COVER WITH FOIL AND BAKE FOR 30-45 MINUTES.

I DON'T KNOW IF THIS IS AMBER'S EXACT RECIPE, I FOUND IT ONLINE. BUT, SHE MADE THIS CASSEROLE AND I COULD EAT THE WHOLE THING ALL BY MYSELF. IT'S KICK ASS! AND, ONLY SHOEPEG CORN CAN BE USED IN THIS CASSEROLE SO DON'T TRY USING YELLOW, WHOLE KERNEL.
