Chopped garlic or Fresh garlic 2- 3 gloves
Oregano
Salt & Pepper
1 28 oz. can of whole plum or pear tomatoes (If you can’t get plum or pear tomatoes you can substitute crushed tomatoes)
1 18 oz. can of tomato paste

Directions:
Coat bottom of a medium/large size pot with olive oil so it is less then ¼ of an inch high.

Add can of whole peeled tomatoes and place in a large bowl. Crush by first squeezing through your hands and then mash with a potato masher. If you are using canned crushed tomatoes, there is no need for this step. Set aside.

Heat oil to medium temperature and add in 2 - 3 tablespoons of chopped garlic. Lightly brown the garlic. (Be sure that you don't over brown garlic).

Once garlic is lightly browned, pour the“crushed” tomatoes and one can of water. Add in 1 ½ handfuls of salt and 1 tsp of sugar (sugar cuts the acid of the tomatoes).

Once mixture comes to a boil, add in the tomato paste with two cans of water (Be sure to get all the tomato paste out of the can). Add 1 - 2 tablespoons of pepper and 3 tablespoons of Oregano.

Let simmer (slow boil) for about 1 ½ hours, stirring occasionally. Once it has thickened and reduced, you are ready to eat serve over linguine.


For Clam Sauce or Pasta Calamari:

For Clam Sauce, ffter Garlic has been lightly browned add one to two cans of cans of chopped clams (depends how meaty you want it).

For Pasta Calamari add in about 1 lb of blanched Calamari

Saute clams or calamari in Olive oil and garlic for 5 minutes and continue with above directions.
