¾ cup Hellmann’s Light or Reduced Calorie Mayonnaise
2 tablespoons lemon juice
¼ teaspoon pepper (may use lemon pepper seasoning)
½ can water chestnuts drained and chopped
½ small cucumber, peeled and diced
¼ cup chopped green pepper
¼ cup chopped red pepper
¼ cup celery
¼ cup thinly chopped carrots
¼ cup sliced green onions (optional)
1 pound imitation crab or lobster – chopped
Dill weed (to taste – approx ½ to 1 teaspoon)
Celery seed (to taste – approx. ½ teaspoon)
salt to taste

In large bowl combine mayonnaise, lemon juice, pepper. Add chopped imitation crab and all other ingredients. Toss to coat well. Add dill weed and celery seed. Add salt to taste. Cover; chill. Serve on a bed of chopped lettuce.
