Ingredients: 4 cups of mashed potatoes 2 c of milk 4 c sugar 7-8 eggs 8 t baking powder 4 t vanilla 6 T oil 4 t salt--I usually just use a little salt 9-10 c flour

Directions: |
Directions:Mix all ingredients. The amount of eggs and flour you use will depend on the consistency of your "dough". Heal enough oil in fryer so that it will cover doughnuts when placed in . It usually has to be a few inches deep. Roll out dough ( it will be slightly sticky) until it is about 1/2"-3/4" thick. cut doughnuts out with cutter and place in oil. When they have puffed up and risen to surface, turn them over and cook until brown. Remove doughnuts and place on paper towels to drain. I usually dip them in a mixture of sugar and cinnamon right before eating. They are delicious when warm. |

Notes: My Grandma Wenger (my mother's mother) always made these for her grandchildren. It was a wonderful day when we went to visit her and the smell of these doughnuts would greet you at her door!! I usually cut this recipe in half--it makes ALOT of doughnuts!
