1/4 c butter
1/4 c diced celery
2 T+ chopped onion
1 c (3 oz) chopped mushrooms
1 T diced pimento
1 T ground cumin seed
1 t rosemary
2 c crushed salted crackers
1 c chicken stock
1 egg yolk
3-4# veal shoulder
3 T barbecue sauce

Melt butter in pan and saute celery and onion. Add next ingredients and mix well. Open veal shoulder and spread stuffing almost to edges. Roll veal back up and tie. Place on open rack in oven @ 325º for 2 1/2 - 3 hours.

This was a recipe I found in Nana's writing in a box of her recipes in the Prescott basement. The DeRosa "girls" remember Nana making this--so we felt fortunate to find it among her numerous recipes!
