Ingredients: Small pumpkin (6 or 7 inches) 2 cups peeled, chopped apples 1 cup raisins 1 cup chopped pecans 1/3 cup sugar 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1 teaspoon lemon juice

Directions:Clean out pumpkin, as if making a jack o' lantern. Leave the stem on top. (Don't clean right down to the shell, leave some of the pumpkin pulp to sort of mix flavors with the other ingredients.) Mix together all of the above ingredients. Put into shell, replace lid. Bake on a cookie sheet until apples are tender, about 40 minutes to 1 hour in 350º F oven. This may be served hot or cold from the shell. Be sure to scrape off some of the pumpkin to go with each serving. A topping of sour cream adds flavor. |

Notes: This recipe from Jane Lenoir was chosen one of the first prize winners by the Georgia Apple Commission from appox. 30,000 apple recipes. The Apple Commission test kitchen recommends serving cold with a topping of ice cream. The Lenoir family always serves it warm, putting it right on the dinner table. Jane says this is a Depression casserole recipe from the 30's and is always served at her family Thanksgiving dinner. Looks great on the table with the turkey, both are of the same golden hue.
