1 1/2 cup boiling water
3/4 tbsp lemon rind, grated
1 c sugar
1/8 tsp salt
1/4 cup cornstarch
2 egg yolks, beaten
1 tbsp butter
1/4 cup lemon juice

Directions:
Directions:
Add lemon rind to boiling water. Blend sugar, salt and cornstarch and stir into boiling water slowly. Cook until thick, stirring constantly. Add some of the hot mixture to beaten egg yolks, then stir yolks into hot mixture and cook for 5 minutes, strirring constatntly. Remove from heat and cool slightly. Stir in lemon juice and butter. Pour into baked pie shells. Cover with meringue, (previous recipe) and bake at 350º until lightly browned, (about 12 minutes).
