1 medium egg plant
Flour
2 tbsp. margarine
2 c. basic meat sauce
1/4 c. finely chopped parsley
1 tsp. nutmeg
1/2 tsp. paprika
1/4 tsp. pepper
1 med tomato (sliced thin)
1 c. grated mozzarella cheese

Directions:

Cut eggplant into sliced 1/2 inch thick. Soak slices in salted cold water 30 mins. Pat dry. Dredge with flour, brush of excess. Saute on both sides in margarine until brown. Drain on paper towel. Add parsley, nutmeg, paprika and pepper to meat sauce. Arrange a layer of eggplant slices in bottom of a buttered 2 qt casserole dish. Pour half meat mixture over egg plant. Cover with half eggplant slices. Pour on remaining meat sauce. Top with remaining eggplant and tomato slices. Top with cheese. Bake uncovered at 375º for 30 min or until top is toasty brown.
