1 cup medium cracker crumbs (Ritz)
1 1/2 lb ground chunk
1 6oz can tomato paste
2 eggs
1/2 cup chopped onions
1/2 cup green peppers (chopped)
3/4 tsp salt
dash of pepper
12oz small curd cottage cheese
1 tbsp chopped parsley
1 tsp chopped oregano

Directions:

In a bowl combine 1/2 cup of cracker crumbs with ground chunk, tomato paste, eggs, onions, green peppers, salt and pepper. Mold 1/2 of meat mixture into oval shape in 3x8x2 pan; make indention down middle of meat. In a separate bowl combine 1/2 cup cracker crumbs with cottage cheese, parsley and oregano. Put cheese mixture in center of meat. Put remaining meat on top. Smooth seams out. Bake for 1 hour at 350º. Let stand 10 minutes before cutting.
