½ c. chopped walnuts
3 well beaten eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp lemon juice
¾ c. flour
2 tsp cinnamon
1 tsp baking powder
1 tsp ginger
½ tsp salt
½ tsp nutmeg



Center Filling Ingredients:

6 oz. cream cheese
¼ c. margarine
½ tsp vanilla
1 c. powdered sugar

Preheat oven to 375 degrees.
Line jelly roll pan with foil. Grease the foil with crisco and set aside. Next beat eggs well and start adding the other ingredients to the mixture. Pour the mixed batter into the pan evenly and cover with chopped nuts (nuts optional). Bake at 375 for 15 min. After baking, while still hot, turn the cake out onto the dishtowel (lint free) or waxed paper that has been sprinkled with powdered sugar. Roll the towel up and allow it to completely cool. When cooled unroll, remove towel or was paper, and spread with filling. Re-roll pumpkin roll, place on dish and refrigerate. Enjoy!
