2 cups flour, 1 cup sugar, 2 teaspoons baking powder, 1/2 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/2 cup shredded carrots, 1/2 cup dole raisins, 1/2 cup chopped walnuts, 1 can crushed pineapple, 2 eggs, 1/2 cup butter, 1 teaspoon vanilla extract.

Combine flour, sugar, baking powder, cinnamon and ginger. Stir in carrots, raisins and nuts. Separately combine undrained pineapple, butter, vanilla.
Stir wet mix into dry ingredients until blended. Spoon into greased muffin tins. Bake at 375º for 20-25 minutes. Remove and let cool.
