1 STICK OLEO
2 CUPS SUGAR
1 TSP BAKING SODA
1 CUP BUTTERMILK
1 TSP VANILLA
2 CUPS FLOUR
1/2 TSP SALT
2 CUPS COCONUT
2 CUPS CHOPPED PECANS
5 EGGS, SEPARATED

ICING:
1 STICK OLEO
1 LB BOX POWDERED SUGAR
1 CUP CHOPPED PECANS
1-8 OZ CREAM CHEESE
1 TSP VANILLA
CREAM ALL TOGETHER AND ICE CAKE. IF ICING IS STIFF ADD A LITTLE HOT WATER.

CREAM CRISCO, OLEO AND SUGAR. ADD EGG YOLKS ONE AT A TIME. ADD ALL DRY INGREDIENTS ALTERNATELY WITH BUTTERMILK. STIR IN COCONUT AND PECANS. FOLD IN STIFFLY BEATEN EGG WHITES. BAKE IN THREE GREASED AND FLOURED CAKE PANS AT 350º FOR 30 MINUTES.

THIS WAS LANCE'S FAVORITE CAKE. I MADE IT FOR HIM EVERY CHRISTMAS. ONCE HE TOOK IT HOME WITH HIM AND ATE IT ALL HIMSELF!
