6 boiled eggs
1/4 c mayonnaise
1 t mustard
1 T sweet pickle relish
salt & pepper to taste

Slice eggs lengthwise and remove the yolk into a separate bowl. Chop the yolks until fine, then add remaining ingredients. Spoon or pipe filling into the egg whites. Serve chilled.

To perfectly cook a boiled egg: In a saucepan, cover eggs with cold water. Bring to a rolling boil over medium high heat. Turn off heat, cover with a tight fitting lid and allow to sit undisturbed for 15 minutes. Cool under running cold water & peel immediately. This proven recipe comes from my sister Linda's 4-H project that won several awards.
