1/2 teaspoon coarse black pepper
1 teaspoon sage leaves, chopped fine
1 teaspoon fennel seeds, roughly chopped
1 teaspoon ground poultry seasoning
1 pound ground pork (or turkey if desired)
2 tablespoons maple syrup
1 tablespoon olive oil

Before you go to sleep the night before the morning you plan to make this recipe, combine salt and pepper, sage, fennel and poultry seasoning in the bottom of a bowl. Add meat and mix to combine spices. Pour 2 tablespoons maple syrup over the pork and work the meat again to combine the maple syrup. Cover with plastic wrap and place in the refrigerator overnight.

In the morning, form meat into patties, 3-4 inches round. Cook patties in 1 tablespoon oil in a nonstick skillet over medium high heat 4 or 5 minutes on each side. Drain sausage patties on a towel lined plate and serve.
