8 cups water
2 cups sugar
1-1/2 large hands of ginger, sliced (less if desired
1 cup water
1 cup lemon juice concentrate, or fresh lemon or lime juice

Directions:
Directions:
Boil 8 cups water with 2 cups sugar.

In blender, combine 1-1/2 large hands of sliced ginger (less if desired) and 1 cup water. Set on grind setting and blend to oatmeal consistency. Combine with sugar water & set overnight.

Strain out ginger. Add 1 cup lemon juice concentrate (or fresh lemon or lime juice).

Makes about 2 quarts of concentrate.

To serve, add water: Ratio of 1 ginger/lemon concentrate to 3 water or 1:2
