Ingredients: 2 pounds of ground turkey or mixture of ground turkey, ground beef and ground pork 2 beaten eggs 1 & ½ cups seasoned bread crumbs (in a canister in the “stuffing” aisle), crunched up corn flakes, saltine crackers, oatmeal, etc. 1 cup BBQ sauce or other tomato-based liquid (ketchup), dash of A-1 steak sauce (you don’t have to have this, it does taste good with it added).

Directions:Lightly oil 13 X 9 glass baking dish (I spray Pam on it, or you can use olive oil), or a large glass casserole dish with a lid. It will keep the meat from sticking to the pan and making a mess that is hard to clean up. If you have a metal dish, that is fine, but it can only go into a conventional oven. Make 8 mini-meatloaves. Arrange in the pan.
Microwave Oven: Option: Put plastic wrap tightly over the whole dish to prevent juices and liquid from splattered in the microwave or put on lid of glass baking dish ; otherwise, do not cover. If you don’t cover it, it may be a little dry and need extra cooking time. Put it into the microwave at 50% power for 10 minutes. Remove carefully, as the dish will be hot. Lift off one end of the plastic wrap or baking pan lid carefully, as a lot of steam will escape. Give each loaf a ¼ turn and move to a different location in the pan (a microwave cooks the outer part of a dish first before the center, so you need to move the more cooked parts to the middle of your dish and reposition the less cooked parts to the outside). Now, re-cover with the plastic wrap and put in again for 10 minutes at 50% power. Remove carefully and lift off one end of the plastic wrap; give ¼ turn and reposition in pan. Cook for 10 more minutes at 50% power, and then check to see if meat is done. I generally cook the entire pan for 40 minutes. |
