3 boxes cornbread mix (Jiffy or Martha White works well)
1 cn Whole kernel corn – drained
1 med onion – optional
2 c. shredded cheddar cheese
1 lb ground beef – browned and drained
½ c jalapeño peppers – optional

Directions:
Directions:
Brown ground beef and onion; drain. In a med bowl, prepare cornbread mix per directions on box and add whole kernel corn into mixture. Pour half of the cornbread into greased 13x9 baking pan. Pour ground beef over cornbread mix; cover with cheese and jalapeños. Pour remaining cornbread mix over the top. Bake at 350 for 45 minutes until slightly brown on top. **Note – because of cheese, toothpick will not come out clean. Cutting into cornbread to see if it is done is usually the best
