Cake:
3 c flour
2 c sugar
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 eggs, beaten
1 c veg oil
1 1/2 tsp vanilla
8 oz crushed pineapple, undrained
1 c chopped pecans
2 c chopped bananas

Cream Cheese Frosting:
8oz cream cheese, soft
1/2 c butter
16 oz powdered sugar
1 tsp vanilla

1/2 c chopped pecans

Directions:
Directions:
Combine first 5 ingredients in a large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 c pecans and bananas.

Spoon batter into 3 greased and floured 9" round cake pans. Bake at 350º for 25-30 minutes, or until wooden pick comes out clean. Cool in pans for 10 minutes. Remove from pans and cool completely.

Spread frosting between layers and on top and sides of cake, then sprinkle with 1/2 c chopped pecans.

Cream Cheese Frosting:
Combine cream cheese and butter, beating until smooth. Add powdered sugar and vanilla, bear until light and fluffy.
