2 1/2 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter
1 tsp vanilla
1 cup sugar
2 eggs, beaten
Colored sugar for cookie tops

Directions:
Directions:
Sift flour, cream of tartar, baking soda and salt, set aside. Cream butter, vanilla and sugar until light and fluffy. Add eggs and beat well. Add sifted dry ingredients 1/2 at a time, stirring to mix thoroughly. Chill 1 hour to overnight.

Shape dough into 1" balls and place 2 1/2" apart on greased baking sheet. Flatten by pressing with bottom of driking glass coated with sugar. (Dip bottom of glass in sugar before flattening each cookie). Bake in 375º oven 8 minutes or until golden brown. Remove cookes to rack to cool.

These are the lightest, airiest sugar cookies I have ever eaten. You also get perfectly round cookies without rolling dough. I prefer a regular shiny baking sheet to the air bake. The air bake changed the texture of the cookie and I didn't care for it. Just my preference.
