1 cup of chopped celery
1/2 cup chopped onions
1 stick butter or margarine
8 oz. of stuffing mix (like Stovetop)
4 cups of mashed potatoes (instant can be used here)
4 eggs, beaten
2 1/2 cups of milk

Directions:
Directions:
Melt butter. Saute onions and celery in the butter until soft and translucent. Cool before adding to eggs and milk. In a bowl combine eggs and milk and onion and celery. Put stuffing mix in a large mixing bowl. Add egg and milk mixture and mix gently. Next fold the mashed potatoes into this mixture. Pour the whole into a greased 5 qt. crockpot. Cook on LOW for 4 hours.
