2 Golden Delicious or Granny Smith apples, cored and coarsely grated
8 oz. (about 2 ¾ cups) red or green cabbage, cored and cut into thin silvers
1 carrot, pared and shredded
1 shredded green or red pepper
1/3 cup mayo
2 to 3 tsp. vinegar
2 tsp. milk 1 ½ tps. Dijon mustard
Dash sugar
Salt and pepper

Directions:
Combine apples, cabbage, carrot and peppers. Combine mayo, vinegar, milk, mustard, sugar and salt and pepper to taste; mix well. Toss with apple mixture. Makes 6 to 8 servings. (Recipe can be doubled.)

Note: Coleslaw can be refrigerated, covered, up to 24 hours. Might have to adjust salt, pepper, and vinegar
