1 lb. dry black beans cooked according to pkg. directions and drained
1 lb. carrots, grated
1 c. dry rolled oats
1/2 c. raw pumpkin seeds
2 tbsp. olive oil
1 tsp. cinnamon
1 tsp. cumin
1 tsp. coriander
1 tsp. chili powder
1 tsp. onion powder
1/2 tsp. cayenne pepper
2 tsp. sea salt
1/2 tsp. black pepper
10 oz. frozen corn
1/2 c. dry oats

Directions:
Directions:
Preheat oven to 300º.
Grate carrots in food processor, remove and keep in a separate bowl.
Grind 1 c. of oats and the pumpkin seeds in food processor until coarsely chopped.
Add 3/4 of the black beans and 3/4 of the carrots, olive oil, and spices to the food processor and grind until all ingredients are thoroughly mixed.
Put mixture in a mixing bowl and fold in remaining ingredients.
Coat sheet pan with olive oil.
Wet hands and form into 12 med. sized patties.
Bake patties for 40 min. turning once.
