2 tazas de harina
2 cucharaditas de bicarbonato
1 cucharada de jengibre en polvo
1 cucharadita de canela
1/2 cucharadita de calvo en polvo
1/2 cucharadita de sal
12 cucharadas de mantequilla sin sal (punto pomada)
1 taza apretada de azúcar moreno (apelmazado)
1 huevo grande
1/4 taza de melaza
1/4 taza de azúcar (para rebozar)

En un recipiente de tamaño mediano, mezclar bien la harina, bicarbonato, jengibre, canela, clavos y sal. En un tazón grande, usando una batidora eléctrica, batir la mantequilla y el azúcar hasta que quede suave. Añadir el huevo y la melaza y batir hasta que estén bien mezclados. Agregar los ingredientes secos y batir un poco hasta que se mezclen. Cubrir y poner en la nevera entre 1 hora (mínimo) y 4 horas (máximo). Precalentar el horno a 180°. Engrasar ligeramente una bandeja de galletas o forrar con papel de horno. Poner 1/4 taza de azúcar en un plato pequeño. Formar bolas de masa de 3,5-4 cm. de diámetro. Rebozar las bolas en el azúcar hasta cubrirlas completamente. Colocarlas en la bandeja a una distancia de unos 5 cm. Caben unas 9 bolas en la bandeja. Hornear durante 10 minutos o hasta que se agriete la superficie y se doren los bordes. Esperar 2 minutos antes de quitar las galletas de la bandeja. Enfriar completamente en una rejilla metálica.
