3 BONELESS SKINLESS CHICKEN BREAST HALVES CUT INTO SMALL CUBES
3 LARGE GARLIC CLOVES CHOPPED
1 LARGE ONION CHOPPED
3 MEDIUM TOMATOES SEEDED AND CHOPPED
2 TBS DRIED TARRAGON
1/4 CUP DRY WHITE WINE
3/4 CUP CHICKEN BROTH
1 CUP HEAVY WHIPIPING CREAM
SALT
GROUND PEPPER
1/2 CUP GRATED PARMESAN CHEESE PLUS MORE FOR SERVING
1 POUND THIN SPAGHETTI COOKED

MELT BUTTER IN A LARGE SKILLET AND SAUTE CHICKEN UNTIL LIGHTLY BROWN. REMOVE TO A PLATE. ADD ONION AND GARLIC TO SKILLET AND COOK UNTIL TENDER ON MEDIUM, AROUND 3 MINUTES. ADD TOMATOES AND TARAGON, AND COOK FOR 3 MINUTES. POUR IN WINE. ADD CHICKEN BROTH AND COOK ON HIGH OR MEDIUM HIGH HEAT UNTIL REDUCED TO ABOUT 1/2. STIR IN CREAM, SALT, PEPPER, AND COOK UNTIL THICKENS SLIGHTLY. LOWER HEAT AND ADD COOKED CHICKEN AND PARMESAN CHEESE. SIMMER TO HEAT THROUGH, ABOUT 3 MINUTES. TASTE FOR SEASONING AND ADD MORE SALT OR PEPPER IF DESIRED. TOSS WITH HOT PASTA AND PASS EXTRA PARMESAN CHEESE FOR SERVING.
