2 1/2 CUPS SUGAR
2 CUP GRATED, RAW ZUCCHINI
2 TSP CINNAMON
1 TSP SALT
1 TSP BAKING SODA
1/4 TSP BAKING POWDER
3 CUPS FLOUR
1 CUP CHOPPED NUTS

IN BOWL BEAT EGGS UNTIL FOAMY, GRADUALLY BEAT IN OIL AND SUGAR. ADD ZUCCHINI, CINNAMON, SALT, SODA AND BAKING POWDER. MIX WELL AND BLEND IN FLOUR, FOLD IN NUTS. POUR INTO 2 GREASED LOAF PANS OR MINI LOAF PANS. BAKE AT 350º FOR AN HOUR.

I LIKE TO USE MINI LOAF PANS BECAUSE SOMETIMES THE BATTER FOR QUICK BREADS SUCH AS ZUCCHINI AND BANANA BREAD, IS SO DENSE AND HARD TO GET DONE IN THE MIDDLE. I DON'T HAVE THAT PROBLEM WITH THE MINI LOAF PANS AND THEY MAKE CUTE GIFTS.
