1 tbsp vegetable oil
2 lb carrots cut into 1 in lengths. half if thick
1 c canned chicken broth or water
1/2 c honey
2 tbsp red wine vinegar
2 tbsp butter

Directions:
Directions:
In a large skillet, heat oil on medium-high. Add carrots and stir once while browning for 2 min. Add broth, honey and vinegar. Season with salt & pepper. Bring to a boil and reduce to simmer. Cover and cook until crisp and tender, about 10 min. Uncover and cook on medium-high until carrots are tender and liquid is syrupy, about 7-9 min. Remove skillet from heat. Add butter & stir until melted.
