4 Large Sweet Potatoes, scrubbed
½ cup butter
1 ½ cups sugar
Cinnamon or nutmeg to taste
3 large eggs
¼ teaspoon baking powder
½ can evaporated milk
1 pre-made piecrust (I use pappy piecrust)

Directions:
Directions:
Rub skins of sweet potatoes with shortening and bake at 325 degrees for 45 minutes or until soft. Turn potatoes over occasionally to bake evenly.

Peel potatoes while still hot. Mix with butter, sugar, spices, eggs, baking powder and milk. Pour into unbaked piecrust and bake at 300 degrees for about one hour.
