Ingredients: 1 whole chicken (about 4 pounds) 3 large peeled onions, halved 1 large peeled sweet potato, halved 2 peeled parsnips, halved 1 peeled large turnip, halved 10 large peeled carrots, halved (or 2 lbs mini carrots) 3 celery stalks, halved 1 bunch parsley, trimmed of stems Salt and pepper to taste

Directions:Put chick in a very large pot and add water to cover. Bring to a boil and add the root vegetables. Simmer for 1 hour. Add celery and parsley. Simmer 90 minutes or until veggies are very soft. Remove the chicken (reserve for another purpose). Drain the veggies into a colander, saving all the broth. Cool slightly. In a food processor, puree the veggies. Return the puree to the broth. Skim off the fat (chill soup to remove fat), reheat, and serve. You can add pastina if you like. Freeze the soup in small containers and use it when a cold strikes! |

Notes: Medical tests have proven that homemade chicken soup helps stop cold symptoms! This recipe is probably the best therapy there is for a cold! The sweet potato, parsnips, and turnips, give the soup a bit of a sweet flavor. I make a big batch - and keep ready in freezer for our "cold" California weather!!
