6-7 cups flour
2 tsp. cream of tartar
4 eggs, separated
¾ lb butter
2 cups sugar
½ tsp. salt
2 tsp. baking soda
2 tsp. vinegar
1 tsp. vanilla

Directions:
Directions:
Sift together 6 cups flour and 2 tsp. cream of tartar
(it is important to measure flour in separate bowl because it is hard to count that high!)

Beat egg whites until they hold a stiff peak and set aside.

Cream together ¾ lb butter and 2 cups sugar.

Put 2 tsp. baking soda in 2 tsp. vinegar.

Mix in 4 egg yolks, ½ tsp salt, 1 tsp vanilla and
2 tsp. baking soda in 2 tsp. vinegar.

Alternately add part of flour and egg whites
If dough is too soft, another cup of flour can be added.

Refrigerate overnight or longer.

Roll on floured pastry cloth or board and cut out cookies. Bake at 325 F 8-12 minutes depending on thickness of cookies
