6 lb beef brisket
¼ cup liquid smoke
1 tsp. garlic powder
1 tsp. minced onion
1 tsp. salt
½ tsp. pepper
1 cup water

SAUCE INGREDIENTS
1 44oz bottle ketchup
1 cup reserved meat juices
¾ cup firmly packed brown sugar
¼ cup Worcestershire sauce
2 tbsp. white vinegar
1 ½ tsp. prepared mustard
1 ½ tsp. celery salt
1 tsp. minced onion
1 tsp. salt
½ tsp. garlic powder
½ tsp. pepper

Directions:
Directions:
Place in large oven roaster the brisket and first list of ingredients.
Cover & bake in 275 F oven until fork tender, about 5-6 hours. Reserve 1 cup meat juices. Chill meat for easier slicing. Remove excess fat from meat, slice thinly across the grain.

In same roaster on top of range, blend sauce ingredients.

Add sliced beef & mix well. Heat & serve on rolls.

Merry's note: Doubled and only used 1 32 oz bottle ketchup. Served at Rehearsal dinner for Gus & Liz at Point of View.
Dorothy's note: On 5/03 USED: 3 lb chuck roast, 2 ½ lb pork loin, 2 cloves garlic, small onion.
