3 to 3 1/2 c all purpose flour or bread flour
1 T. sugar
1 package rapidrise yeast
2 t. Italian herb seasoning
1 t. salt
1 c. very warm water
1 T. butter or margarine, softened
3 oz. each: sliced ham, sliced salami, provolone
1 small jar, roasted red peppers
1/2 c. sliced black olives, drained
1 egg white, lightly beaten
sesame seed, optional

In large bowl, combine 2 1/2 cups flour, sugar, undissolved yeast, italian herb seasoning and salt. Stir warm water and butter into dry ingredients. Stir in enough remaining flour to make soft dough. Knead lightly on floured surface until smooth and elastic (about 4 minutes). Cover-let rest 10 minutes.
On lightly floured surface, roll dough out to about 10"x14" rectangle. Layer ham, cheese, salami on CENTER third of dough. Top with red peppers and olives. Make cuts from filling to dough edges at 1-inch intervals along sides of filling. Alternating side, fold strips at an angle across filing (looks like a braid on top of filling). Lift loaf onto greased cooking sheet;cover. Let rise in warm place until doubled in size, about 30-45 minutes.
Brush loaf with beaten egg white (optional). and sprinkle with sesame seed. Bake at 400º for 25 to 30 minutes. Serve warm or room temperature with mustard.

You can add ANY combination of fillings.I have made all vegetarian with cooked spinach, artichokes, olives & feta cheese; also combined different sliced meats. I have made this many times for potluck gatherings (indoors and picnic).
You can bake loaf ahead of time, freeze, and then reheat, wrapped in foil.
