1 lb. (2 1/2 cups) dried black-eyed peas
8 cups water

7 slices bacon
1 bunch green onions, chopped
1 onion, chopped
1 green bell pepper, chopped
1 cup chopped fresh parsley
1 small jalapeņo pepper, seeded & minces
1-3 cloves garlic, pressed
2 T. Worcestershire sauce
1/4 tsp. hot sauce
1 1/3 tsp. salt
1/2 tsp. pepper
1/4 tsp. dried oregano & thyme

1 lb. smoked sausage, sliced
1 1/2 cups chopped smoked ham (about 1/2 lb)
1 141/2 oz. can Cajun-style stewed tomatoes, undrained

Directions:
Directions:
Sort and wash peas; place in large Dutch oven.
Add water to depth of 2" above peas.
Cover and let stand 8 hours or overnight.
Drain peas, return to pan.

Add the 8 cups water; bring to boil; cover, reduce heat and simmer 30 minutes, stirring occasionally.
Add bacon and next 12 ingredients; return to a boil, reduce heat, simmer 30 minutes or until peas are tender.

Add sausage, ham and tomatoes; return to a boil.
Cover, reduce heat, simmer 30 minutes.
Remove bacon, if desired.
