1 1/4 cup sugar
1/2 cup margarine or butter, softened
2 eggs
1 1/2-2 cups mashed ripe bananas
1/2 cup buttermilk
1 tsp vanilla
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 cup chopped nuts, Pecans if desired

Directions:

Place oven rack in the lowest position. Preheat oven to 350º. Oil bottom of loaf pan. In a large bowl, mix sugar and margarine. Stir in eggs until well blended. Add bananas, buttermilk, and vanilla, beat until smooth. Stir in flour, baking soda, and salt until moistened. Stir in nuts and pour into pan and bake. 8" loaf pan - 1 hour; 9" loaf pan - 1 1/4 hour; mini loaf pan - 30-35 minutes
Insert a wooden toothpick in center of loaf and if it comes out clean your bread is ready. Cool completely before slicing.
