3 medium onions
2 large stalks celery
3 Tbls. butter
28 oz. tomatoes, diced
2 Tbsp. cumin
6 oz. beer
2 medium green peppers
2 small cloves of garlic
8 lb. Chuck roast, lean and ground
3 oz. chili powder
Tabasco to taste
Red kidney beans
Garlic salt
Pepper and salt to taste

Directions:
Dice and saute' onions, celery, tomatoes and cumin in butter. Add meat and brown. Add remaining ingredients, including beer. Do not add beans at this time. Add water or tomato juice just to cover top. Cook about 3 hours on low heat on stove top. Add kidney beans for the last 15 minutes.
