1 1/2 cups of mayonnaise
1 (4 ounce) jar pimiento, drained
1 teaspoon Worcestershire sauce
1 teaspoon onion, finely grated
1/4 teaspoon ground red pepper
1 cup pecans, chopped & toasted
1 (8 ounce) extra sharp Cheddar Cheese, shredded
1 (8 ounce) Sharp Cheddar Cheese, coursely shredded

In a large bowl, stir together mayonnaise, pimiento, Worcestershire sauce, onion and ground red pepper. Preheat oven to 350º. Bake chopped pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted. Stir halfway through. Using the small side of a grater, finely shred extra sharp cheddar cheese. Then use the large side of the grater to coarsely shred the sharp cheddar cheese. (Freshly grated cheese makes a difference) Add pecans and shredded cheese to mayonnaise mixture, stirring until blended. Serve with crackers and strawberry jam.
