2 CANS BLACK EYED PEAS (DON'T DRAIN)
1-1 LB PKG SMOKED SAUSAGE
1 GREEN PEPPER
1 SWEET RED PEPPER
1 MEDIUM ONION
1 CAN ROI-TEL

Directions:
Directions:
SLICE SAUSAGE DIAGONALLY. CUT PEPPERS AND ONION INTO STRIPS ( I CUT STRIPS THE IN HALF BECAUSE THEY'RE EASIER TO FORK THAT WAY). BROWN SAUSAGE AND ADD PEPPERS AND ONIONS AND SAUTE UNTIL SOFT. ADD PEAS AND ROI-TEL. BRING TO A BOIL. LOWER HEAT AND SIMMER UNTIL LIQUID IS COOKED DOWN.

YOU CAN OMIT THE SAUSAGE IF YOU WANT TO SERVE IT AS A SIDE DISH. I LIKE TO SERVE IT WITH FAYE'S CABBAGE AND SOME CORNBREAD. THAT'S GOOD EATIN!
