stewing steak (equal volumes of meat and onion)
onions
beer(not lager)
white bread
salt, pepper
oil

dice the beef
thinly slice onions
fry onions in oil gently till soft but not brown
brown the meat in oil a few pieces at a time
arrange layers of meat then onions in a casserole dish, seasoning each layer, finishing with onions
pour beer over till top layer in covered
remove crusts from bread,
made a lid with the bread making sure it covers all the contents, push the bread down so that it is thoroughly damp but not floating
cook slowly in a moderate oven(160c,325f, gas 3) for three hours or longer
the top should be golden and crisp, the meat etc meltingly tender

this is amazingly simple to prepare, you just need equal volumes of meat and onions. we make a big dish, the cooking time is not crucial on a low temperature and it's always beautifully tender.
i use beef skirt as a first choice or shin of beef.
