1 LB POTATOES CUT INTO 1 INCH PIECES
1 SMALL ONION, THINLY SLICED
1/4 CUP DIJON MUSTARD
1/4 CUP OLIVE OIL
1 TSP HONEY
1 TBS PARSLEY FLAKES
SALT & PEPPER TO TASTE

PREHEAT OVEN TO 375º. MIX ALL INGREDIENTS EXCEPT PARSLEY AND POUR INTO A SPRAYED BAKING PAN. BAKE FOR 35-40 MINUTES OR UNTIL TENDER. SPRINKLE PARSLEY OVER POTATOES AND SERVE.
