1 (16-oz.) package of bacon
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup sugar
1 Tbsp. chopped fresh basil
2 (11-oz.) cans mandarin oranges, drained
1 head red leaf lettuce, torn
1 head romaine lettuce, torn
1 (4-0z.) package sliced almonds, toasted

Directions:

1. Cook bacon to a consistency that will allow for crumbling or to break into small pieces.
2. Whisk together the olive oil, red wine vinegar, sugar, and chopped basil in a large bowl.
3. Add oranges and lettuce to the bowl. Toss gently to coat.
4. Add bacon and almonds
5. Serve immediately.

**I usually toast the almonds at 350º in either the oven or toaster oven for about 5-8 minutes, depending on how "toasty" you like them. Watch them closely!! I have burned them MANY times. Enjoy!!
