large sweet white onions (Vidalia are best)
seasoned flour
beer
milk
hot sauce to taste
oil for frying

seasoned flour: (you'll have to do the math on this one ~ this is a restaurant sized recipe)
25 lbs flour
1 cup garlic
1/2 cup white pepper
2/3 cup crushed oregano
2 Tbsp onion powder

Directions:
Directions:
Mix together the seasoned flour. Slice onions into 1/4 inch thick rings, separate rings. In a large bowl, add small amount of beer milk. Toss rings to coat. Sprinkle small amount of flour mixture over rings and continue to toss. Continue adding milk, flour mixture and tossing until all rings are coated with a wet mixture. Gently layer coated rings into a greased fryer basket. Do not pack down. Completely submerge in to hot fry oil. After heat has set rings shake basket slightly to loosen rings from side of basket. Continue to fry until a crispy golden color.

Remove from fryer and allow to drain. Serve with ketchup or barbecue sauce.
