1 1/2 t. thyme dried
1/4 t. salt
1/4 t. pepper
2 T. EVOO
2 leeks, white and light green parts, diced
5 oz. chopped baby spinach
1/2 c. diced ham
1/2 c. Gruyere

Directions:
Directions:
Preheat 450º. Rack upper third.
Whisk eggs, thyme, salt, pepper in med bowl.
Heat oil in lg skillet over med heat. Add leeks, cook stirring until softened, about 4 min.
Add spinach and ham; cook, stirring until spinach is wilted.
Pour egg mixture over veg and cook, lifting edges of frittata so uncooked egg can flow underneath, until bottom light golden, 2-3 min.
Sprinkle cheese on top, transfer pan to oven and bake until eggs set about 6-8 min.
Let rest 3 min before serving. Serve hot or room temp.
