1 beef roast (4 lb size)
1 can (6 oz size) unsweetened pineapple juice
1 can (small size) crushed or diced pineapple, undrained
3 tablespoons soy sauce
3 tablespoons brown sugar
1 envelope dry onion soup mix
1 cup diced red and/or green pepper
1 cup diced onions

Directions:
Directions:
Place beef roast in crock pot. Mix remaining ingredients. Pour over beef.

Cook 8-10 hours on Low, until beef is tender.

Slice or shred beef, return to crock pot and cook 1/2 hour more. Serve over rice.

Cook's Note: You may also cook this in a Dutch oven in conventional oven at 350 degrees for 2 hours. Remove, slice or shred beef, and return to oven to cook 1/2 hour longer.
