1 c. flour

1/2 t baking powder
1/8 t soda
2 T shortening
1 egg beaten
1/4 c buttermilk
1 3lb chicken, disjointed
1 bay leaf
1 sm carrot
1 stalk celery
pepper to taste

Directions:
Directions:
Sift flour, 1/2 t salt, baking powder and soda together. Cut in shortening; add egg and buttermilk. Mix until well blended. Turn out on well-floured board; knead until smooth, adding more flour as needed. Roll out thin. Let stand for 2 to 3 hours to dry. Place chicken, bay leaf, carrot and celery in kettle; add water to cover. Season with salt and pepper. Cook, covered, for about 45 minutes or until chicken is tender. Remove chicken to platter; keep warm. Strain broth. Return to kettle, Bring to a boil. Cut dough into strips about 1 inch wide and 3 to 4 inches long. Add strips to gently boiling broth, pushing down dumplings as strips are added. Cover; simmer for 20 minutes. May add 1/2 cup milk mixed with flour to thicken, if desired.
