Ingredients: 6 c.swiss cheese, shredded 6 c. white sharp cheddar cheese, shredded 5 Tbls. flour 2 c. white wine 2 Tbls. lemon juice 1 garlic bud 3 Tbls. Kirshwasser or cherry brandy Stick bread or rolls for dipping

Directions:Cut the bread into bite size pieces making sure that each piece has a bit of crust on it so that it will not dissolve and fall into the hot cheese. Set aside. Grate the cheese with the smallest blade of the shred on the Cusinart. Put it all in a large bowl or in baggies. Add the flour and shake or mix until the cheese is coated. In the top of a double boiler, rub the cut garlic clove and discard the rest of the garlic. If you are going to transfer the fondue to another pot rub that pot also. Put about 2 inches of water in the bottom of the double boiler and bring almost to a boil. Turn down to simmer and place top pot on the bottom pot. Add the wine and the lemon juice and simmer until warm. Slowly add the cheese in small amounts and mix continuously to make sure the cheese is smooth. When warm either put on stand with burner to keep the water warm under the cheese or transfer to a different fondue pot and make sure the water is simmering under the cheese. As the time goes on if the cheese binds up add a little wine and stir until smooth. |
