4 red snapper fillets
salt and pepper to taste
1/2 pound shrimp, peeled, deveined and cooked
2 tablespoons minced fresh parsley
1 tablespoon capers, drained
1/4 teaspoon dried basil
1 cup cracker crumbs
1/4 cup mayonnaise
1/3 cup freshly grated Parmesan cheese
Lemon wedges for garnish

Marinade
1/4 cup fresh lemon juice
1/2 cup dry white wine
1/4 cup minced onion
1/2 cup olive oil

Directions:
Directions:
In bowl, whisk together lemon juice, wine, onions and oil.
In a baking dish combine the fillets with all but 1/4 cup of the marinade. Cover and marinate in refrigerator for 3 hours, turning every hour. Remove from marinade and pat dry. Season with salt and pepper. Place in 13x9 baking dish. Combine shrimp, parsley, capers, basil, crumbs, mayonnaise, Parmesan cheese and remaining 1/4 cup marinade. Bake fillets at 400 degrees 10 minutes on middle rack. Spread shrimp mixture on fillets and bake 5 minutes longer. Broil 5 minutes about 4 inches from heat source or until topping is crisp and golden. Garnish with lemon wedges.
