Ingredients:  
2 lbs. assorted root vegetables, peeled & cut into bite-size pieces. (such as carrots, parsnips,beets, onions, turnips & sweet potatoes)
10 cloves garlic, peeled
1/3 c mayo (1/2 fat works)
drizzle of olive oil
1 T fresh rosemary (chopped)
1/4 tsp fresh ground pepper
2 T fresh parsley (chopped)

Directions:
Directions:
In large bowl, combine all ingredients except parsley. Stir until well coated & turn into parchment lined or greased shallow baking pan. Roast in a 425 º oven, turning twice, for about 35 minutes or until golden & tender. Sprinkle with parsley.
